- 1Sear beef in a large pot over medium-high heat for 5-6 minutes, breaking into crumbles, until deeply browned.
- 2Add onion, bell pepper, and garlic, and cook 4-5 minutes until softened.
- 3Stir in crushed tomatoes, both beans, tomato paste, beef stock, chili powder, and cumin.
- 4Bring to a simmer, then reduce heat to low and cook uncovered for 30-35 minutes, stirring occasionally, until thickened. Season with salt and pepper to finish.

- Freezes well for up to 3 months in individual portions.
- Top with a small spoon of Greek yogurt instead of sour cream to keep it lighter.
