Steps
- 1Boil potato cubes in salted water for 15-18 minutes until fork-tender, then drain thoroughly.
- 2Mash potatoes with warm milk, 20g butter, and salt until smooth and fluffy.
- 3For the gravy, melt 15g butter in a saucepan over medium heat, whisk in flour, and cook 1-2 minutes until light golden and no raw flour smell remains.
- 4Gradually whisk in stock, then simmer 4-5 minutes, whisking often, until thickened enough to coat the back of a spoon. Season with pepper and onion powder.
- 5Spoon mashed potatoes into bowls and pour warm gravy generously over the top.
Tips
- Rice the potatoes through a ricer instead of mashing for an extra-smooth texture.
- Keep the gravy just below a simmer to avoid it thinning back out.
